Mediterranean Tuna and Kale Salad: Batch Cooking!

This light and refreshing salad requires no cooking! I often prepare a batch on Sundays and then have a fresh, crunchy salad to look forward to a lunchtime for the rest of the week. The best part is it only takes me about 20 minutes to make from start to finish!

The freshly squeezed lemon juice & lemon zest add so much flavor to the salad. The flavors are amazing and refreshing.

// Mediterranean Tuna and Kale Salad

Ingredients (4 servings)

  1. 2 cans of Tuna

  2. 1/2 red onion, chopped

  3. 1 bell pepper, chopped

  4. 1 can of chick peas

  5. 1/2 cup of fresh parsley, chopped finely

  6. Juice of 1 lemon

  7. Zest of 1 lemon

  8. Salt & Pepper to taste

Toppings:

  1. Panko bread crumbs

  2. Parmesan cheese

  3. Cesar dressing – my favorite from healthy living! Only a handful of ingredients!

Serve over a bed of kale & romaine.
